OK, it was a little while ago. Just the same I think I will keep some people in the back of my mind. You know, people like Chef Henri Charpentier. Yes that Henri Carpentier. Ok so he once ruined the sauce. It was just a little over done. OK, it was burned. It could of happen to anyone. Henri was serving then Prince Edward of Wales and his guests. He had no time to remake the sauce. He tasted it, and it did not taste that bad. It was kind of good. He Served the Prince and his guests and named the tasty dish Crepes Princesse. However, when the prince gently protested. He changed the name to honor one of the guest. We now call the dish Crepes Suzette. So today I hope you will have a very HAPPY, Crepe Suzette Day.
