Sorry to hear your Sooners lost, hopefully they will win their next game. Your street tacos sound really good. My favorite tacos would be Okie Tacos, where you put hamburger on on half of the tortilla and then fold it over in a skillet with just a bit of oil in the bottom of the pan so they don't stick. They are delicious.

We LOVE tacos! Ground beef, cheese, lettuce, tomato, mild salsa, and sour cream for me. Goes great with a Margarita!

Now, are we discussing street taco prep as well? A lite coat of olive oil, on both sides wit a sprinkle of sea salt. Warm them until they are truly soft. Place them on a plat with a small hand towel and cover them over. Serve with the meal. They are the last piece to be cooked for lunch/dinner is served.

The second is a chirizo, grilled or fried. Cut up into tiny pices. I use red onion chopped fine, salantro, chipotle salsa, and the casofresco cheese, again on a stree taco

I have two types of tacos I enjoy. Its all about the prep. The first is a carne-asada, but I marinate the meet in a Mexican coke (real sugar) lime and orange juice, with assorted spices. I let it sit in the bag (fridged of course) for 5-6 hours. It makes the meat tender. Slow grill, and serve with fresh guac, chipotle salsa, pico-de-gallo and caso-fresco crumbled cheese on a street taco shell.
