Crustless Pumpkin Pie
I found this on the u tube place from Hillbilly Kitchen under Impossible Pumpkin Pie.
We all really enjoyed this pie. It is not silky like your typical custard ish pie. It has more body. The very outer edges touching the pie pan get a bit drier which almost makes it a crust. You can carry a piece in your hand as you visit with friends or family.

I have not run it thru a nutrition website yet. Skipping a traditional pastry crust lowers the carb and fat content.
Cowboy says he loves the butter pastry crust I make - if going crustless gets him pie more often he is on board.

The picture is a sloppy cut of crustless pumpkin with a slice of chocolate meringue in the background. You can cut it neatly.

Crustless Pumpkin Pie

Preheat your oven to 350oF

Butter your pie pan. I even smeared butter on the top edge. Just grab a cold stick, expose one end, and rub it all over the inside of you pan. It works great and no greasy fingers.

2 large eggs, I set mine out an hour ahead to warm them to room temp.
3/4 cup sugar (brown, white or sugar substitute)
1/2 tsp. salt
1 tsp baking powder
1/2 cup all-purpose or gluten free flour
1 1/2 cups milk (whole, evaporated or plant)
4 tablespoons melted butter - room temp
2 tsp. pure vanilla extract
1 to 1 1/2 cups pumpkin (you can use the whole can)
2 + tsp pumpkin pie spice

How I made the pie.
Put the brown sugar, salt, baking powder, flour, and pumpkin pie spice in a bowl. Whisk together to get the spices coated in flour so they mix into the wet ingredients well. This also breaks up any clumps in the brown sugar. Then in a separate bowl, I whisked the eggs, milk, vanilla, melted butter and pumpkin. Add the dry to the wet and stir/whisk until combined.
Pour into the well buttered pie pan.
Bake 45 - 60 minutes.

The top will start to crack. The center might be a tiny, big jiggly.
The brown sugar adds a lovely warm flavor.
I used 2 generous tsp of my homemade pumpkin pie spice. Next time I will use 3-4.
I used the whole can of pure pumpkin.
The pie came out of the pan beautifully. No sticking at all. You can hold a slice in your hand and wander thru life noshing
