A DISH TO ENJOY

Good morning, Happy Relaxing Sunday everyone. After doing

some serious cooking yesterday I need to relax myself.

Yesterday I made my mothers famous Enchilada Casserole.

My neighbors Birthday is today and I gave her a quarter of it

my husbands friend a quarter of it and kept the rest for myself

as hubby doesn't care for it because it has green onions in it.

He is not a fan of onions at all so I thought I would share this

deliciously amazing recipe with you all in case you would like

to try something new.

RECIPE:

Two pounds of ground beef

One package 10 pack corn tortillas ( they are larger )

One can of chopped black olives

Two cans of Mild Las Palmas Enchilada Sauce

One bunch of green onions

Two pounds of Monterey Jack Cheese

Some cheddar cheese for color

DIRECTIONS:

Cook ground beef in a skillet until it's almost done

Add 1/2 can of Las Palmas Sauce

Add can of chopped black olives

Put on low heat

Chop up green onions

Grate Cheese

Heat the rest of the Las Palmas Sauce in a sauce pan

Get a deep baking aluminum pan and spray it with crisco spray or

what every cooking spray you use.

Then take the deep pan and put a few ladles of sauce on the bottom

Take your tortillas and microwave them for twenty seconds

or dip them in the sauce and put them on the bottom of the pan.

Then take your ground beef and olive mixture and spread it over

the tortillas.

Then add your layer of green onions

Then add your jack and cheddar cheese ( more jack than cheddar)

Then another layer of tortillas, then ground beef, and then onions

and cheese and then put the cheddar on the top for color.

Cook in the oven on 350 degrees for half an hour
