It's so hard to choose a favorite when each form has a different use. For instance, I go through lots of butter because I have toast for breakfast and use it for cooking, or add it to vegetables (and meat sometimes).
Or is it cheese because I will admit, I eat a lot of cheese.
Yogurt? Good breakfast and nice ingredient (similar with sour cream) for spicy meals.
Milkshake? who doesn't like a cold creamy shake on a hot summer day (luckily it's winter).
The nature and uses of the products are so different I'm not sure a favorite form exists.
I know it's difficult to choose. It was a toss-up between butter, cheese and ice cream for me but I eventually chose ice cream.
@spunkycumfun just came in from stacking roundbales and hands are frozen. i chose other because it all depends on what I'm doing.

@spunkycumfun Not really, but I have a bull, 2 cows, 2 potbelly pigs, and 4 sheep (down from 180-300). I tried farming when I burned out, and discovered I enjoy it, but I'm not good at it. (lots of bad decisions, and a touch of Green Acres the TV show). But needing to care for the livestock keeps my dysthymia in check.

I voted cheese my friend as I don't drink a lot of milk unless it's double chocolate milk. I just love cheese though and I don't have any issues with dairy.

I go with ice cream, with butter (melted on a toasted bagel is good) and cheese (all types, with burratta an exotic favorite. I had some freshly made in Italy, which was heavenly). Least favorite is probably the sour milk.
I've never had burratta cheese. I'll now look out for it.

I am a huge dairy fan so choosing one item from your list is impossible.
I like the heavy sourness of goat or sheep's milk yoghurt, the sweet fermentation of frothy yayik ayrani and thick xinogala (Greek version of buttermilk), the peppery bitterness of mouldy cheeses like Stilton, Gorgonzola and Roquefort, the feathery lightness of Chantilly cream, the chalkiness of Parmiggiano Reggiano, the robust flavor of aged Cheddar or Swiss Emmentaler, the chewy saltiness of Cypriot halloumi, the fruity tang of Syrian shankleesh, the golden creaminess of French cow's butter, the sweet earthiness of Greek sheep's butter, the divine Italian gelato, and on and on.
If I had to choose, it would be fresh buffalo milk or buffalo milk yoghurt.
(One can also find fresh donkey milk at some dairy stores, I have not tried that yet.)
As a Greek oddly enough I don't care that much for feta. I will only eat it during the summer months in a Greek salad. Feta enthusiasts however should try a slice of feta on a plate, drizzled with olive oil and topped with dried oregano rubbed between your palms to release the essential oils of the herb.
Also the Greek version of tsatziki doesn't impress me (Turkish or Levantine variations with mint included are preferable). Instead of tsatziki, anyone visiting Greece should try tyrokafteri, a hot and spicy feta and yogurt blend that is quite addictive once you try it.
Finally, there is a sheep and goat's milk product local to the island of Crete that I consider unique and irresistible. It's called staka, and resembles something between clotted cream when cold and fondue when served warm.
Many years ago I had access to a source of unpasteurized fresh organic milk once a week. I would boil one liter for drinking and another liter I'd use to make my own yogurt. What a delight to taste a different milk each week, depending on where the cow had been grazing. You could discern the either sweet or bitter greens the cow had access to day by day. That made me realize how terrible industrialized milk has become. One of the joys of traveling to less industrialized countries, or to rural parts of Greece, is the chance to taste 'real' milk and yoghurt.
A recent trend in Greece has been the opening of "small production" dairy shops specializing in products supposedly from small farm units. Some are good, some I wonder how 'small' they are when there are ten or more branches opening up in the city.
(I wonder why you have buttermilk and fermented milk as two separate categories.)
I'm not a fan of sheep's milk nor goat's milk, and donkey's milk definitely doesn't appeal.
The categories for this poll aren't discrete, which is a methodological no-no. I could have put cheese curds with cheese and collapsed a few 'cream' options. But i wanted to capture the most popular dairy products.
